It's no secret. The Locher brewery AG also only brews with water. However, with a very special one: spring water from the Alpstein. After its long journey through the rock formations, it is of such excellent quality and purity that we use it for our Appenzeller beer without much treatment - quöllfrisch. In Appenzell, they brew directly from the source. No wonder our bestseller is called "Quöllfrisch". The family consists of natural cloudy, light, and dark.
